Sear the Chicken: In a large pot or Dutch oven, heat a bit of avocado oil over medium-high heat. Add seasoned chicken to the pot, skin side down. Cook until the skin is golden brown and crispy, about 5-7 minutes. Flip the chicken and cook for another 2-3 minutes. Remove the chicken from the pot and set aside.
