Equipment

  • 1 cooking pot

Ingredients

  • 1 pack pack Shin Ramyun noodles or any other instant noodles
  • 2 large eggs
  • 1 stalk green onion
  • 1 tablespoon avocado oil or neutral oil
  • 1 clove garlic minced
  • 1 tablespoon green onion finely chopped
  • ½ packet packet Shin Ramyun seasoning powder
  • 1 tablespoon rice seasoning optional
  • A pinch of white pepper
  • A few slices of fresh chili optional
  • A splash of soy sauce
  • ½ teaspoon toasted sesame oil
  • Ice water for green onion and egg cooling

Instructions

  • Gather Your Ingredients: Before you start cooking, lay out all your ingredients. Having everything ready will make the process much smoother.
  • Make the Green Onion Curls: Thinly slice the green part of the onion lengthwise into very fine strips. Place them in a small bowl of ice water for about 5 minutes. They’ll naturally curl as they soak. Once curled, drain and gently pat dry with a paper towel. Set aside for later.

  • Cook the Soft-Boiled Eggs: Bring a small pot of water to a gentle boil. Lower the eggs in carefully with a spoon to avoid cracks. Cook for exactly 7 minutes, then transfer the eggs to an ice bath for 5–10 minutes to cool. Peel and slice in half—the yolks should be soft and jammy, perfect for ramen.

  • Boil the Noodles: In another pot, bring 2½ cups of water to a boil. Add the Shin Ramyun noodles and cook for just 2 minutes so they stay bouncy, not mushy. Drain and set aside.

  • Pour Over the Hot Oil: Heat avocado oil in a small saucepan until it reaches about 270°F (132°C). Carefully pour the hot oil directly over the ingredients in the bowl. It should sizzle—this step releases the full flavor of the aromatics. Stir to mix.
