Instructions
Gather Your Ingredients: Before you start cooking, lay out all your ingredients. Having everything ready will make the process much smoother.
Make the Green Onion Curls: Thinly slice the green part of the onion lengthwise into very fine strips. Place them in a small bowl of ice water for about 5 minutes. They’ll naturally curl as they soak. Once curled, drain and gently pat dry with a paper towel. Set aside for later.
Cook the Soft-Boiled Eggs: Bring a small pot of water to a gentle boil. Lower the eggs in carefully with a spoon to avoid cracks. Cook for exactly 7 minutes, then transfer the eggs to an ice bath for 5–10 minutes to cool. Peel and slice in half—the yolks should be soft and jammy, perfect for ramen.
Boil the Noodles: In another pot, bring 2½ cups of water to a boil. Add the Shin Ramyun noodles and cook for just 2 minutes so they stay bouncy, not mushy. Drain and set aside.
Build the Flavor Base: In your serving bowl, combine the minced garlic, chopped green onion, rice seasoning (if using), half of the Shin Ramyun seasoning packet, a pinch of white pepper, and a few fresh chili slices for heat.
Pour Over the Hot Oil: Heat avocado oil in a small saucepan until it reaches about 270°F (132°C). Carefully pour the hot oil directly over the ingredients in the bowl. It should sizzle—this step releases the full flavor of the aromatics. Stir to mix.
Season and Blend: Add a splash of soy sauce and a drizzle of sesame oil. Mix well to create a rich, flavorful ramen base.
Assemble the Ramen Bowl: Add the cooked noodles to the bowl and toss until evenly coated in the sauce. Top with the soft-boiled eggs, green onion curls, and more rice seasoning if you like. Enjoy a creamy, spicy, umami-packed ramen that feels like restaurant quality—made from instant noodles!
