1lb.450g shrimp, shell on, deveined

Instructions
Gather all the ingredients.
Preparation: Clean and devein the shrimp, cut the celery into 2-inch lengths, mince the garlic and ginger, and slice the red chili peppers. Chop the green onions.
Cooking the Shrimp: Heat 2 tablespoons of vegetable oil in a wok or large skillet over high heat. Add the shrimp and two whole garlic cloves. Stir-fry until the shrimp turn pink and are just cooked through, about 2-3 minutes. Add salt and pepper to taste. Remove the shrimp from the wok and set aside.
Stir-Frying Vegetables: In the same wok, add the remaining 2 tablespoons of vegetable oil. Add the minced garlic, ginger, and celery pieces. Stir-fry for about 2 minutes until fragrant.
Combining Ingredients: Return the cooked shrimp to the wok. Add the red chili peppers and stir-fry for another 2 minutes. Add the rice wine, salt, and pepper to taste. Pour in the 1/4 cup of water and stir everything together. Cook for an additional 1-2 minutes until everything is well combined and heated through.
Serving: Transfer the stir-fry to a serving dish and, if desired, garnish with additional chopped green onions.
