Preheat the oven to 275°F.
Prepare the Dry Rub: In a small bowl, mix together the salt, pepper, smoked paprika, onion powder, garlic powder, and Espelette powder.
Season the Ribs: Coat both sides of the ribs with mustard, which acts as a binder for the dry rub. Generously apply the dry rub mixture to both sides of the ribs, ensuring an even coating.
Bake the Ribs: Wrap the seasoned ribs tightly in parchment paper and aluminum foil to lock in moisture. Place the wrapped ribs on a baking sheet and bake in the preheated oven for 2.5 hours, or until the ribs are tender and the meat easily pulls away from the bone.
Prepare the BBQ Sauce: While the ribs are baking, prepare the BBQ sauce. In a medium bowl, combine the ketchup, pepper, salt, garlic powder, soy sauce, Worcestershire sauce, balsamic vinegar, and mustard. Mix well until all the ingredients are fully incorporated.
Apply the BBQ Sauce: Once the ribs are tender, remove them from the oven and carefully unwrap them. Brush a generous amount of BBQ sauce on the top side of the ribs, where the bones curve.
Glaze and Finish: Increase the oven temperature to 450°F. Place the ribs back in the oven, uncovered, and bake for an additional 5-8 minutes, or until the sauce is caramelized and sticky.
Serve and Enjoy: Remove the ribs from the oven and let them rest for a few minutes. Slice the ribs between the bones and serve with extra BBQ sauce on the side.
