  • 1 lb chicken thighs boneless or bone-in
  • 5-6 green onion stalks sliced
  • 2 inches ginger root sliced
  • 5-6 garlic cloves smashed
  • 3 star anise
  • 1 cup soy sauce
  • 2 tablespoons soy paste or substitute with thick soy sauce
  • 2-3 tablespoons Shaoxing cooking wine
  • A dash of sesame oil
  • 2 cups chicken broth

Instructions

  • Prepare the ingredients: Slice the green onions into 2-inch pieces. Peel the ginger and chop it into large chunks.

  • Sear the chicken: Heat a little cooking oil in a sauté pan over medium heat. Add the chicken thighs and sear until lightly browned, about 2–3 minutes per side. Toss in one garlic clove while searing to add extra flavor. Season with salt and pepper. Once browned, transfer the chicken and garlic to the clay pot.
