Instructions
Gather the ingredients: Chop the green onions, garlic, and red chili pepper. Separate the egg yolk from the egg white and set the yolk aside for the sauce.
Mix the sauce base: In a large serving bowl, add the seasoning powder from the ramen packet, minced garlic, mayonnaise, and the egg yolk. Stir until well combined. This mixture will become the base of your creamy, flavorful broth.
Cook the noodles: Bring a pot of water to a boil. Add the ramen noodles and cook according to the package instructions—usually about 3–4 minutes—until they’re just shy of al dente for a slightly firm texture.
Combine: Once the noodles are cooked, ladle a small amount of the hot noodle water into the sauce bowl to gently temper the egg yolk. Stir well to create a smooth, creamy base.
Then add the drained noodles and just enough broth to your liking. Toss everything together until the noodles are evenly coated in the creamy sauce.
Top it off: Finish with your favorite toppings—sprinkle on the chopped green onions, grated cheese, sliced red chili, and a drizzle of chili oil for an extra spicy kick.

Notes
Use Kewpie mayo for the best flavor and creamy texture. Regular mayo works too if that’s what you have.
Want it spicier? Add more chili crisp oil or a pinch of red pepper flakes to turn up the heat.
Not a fan of raw garlic? Lightly sauté the garlic before mixing it in for a milder, roasted flavor.
